This raw milk cheese takes its name from a village in the upper Brembana Valley. This cheese is soft and compact, with unique patridge eye holes and young, typically aromatic delicate flavor. Each wheel is aged at least 30 days, and we recommend setting it at room temperature for 15 minutes before consuming it.
A classic pairing is to melt the cheese over a warm batch of polenta, and pairs fantastically with a full-body red wine.
