The Grape:
Cannonau di Sardegna has the potential to be one of Italy's most compelling red wine and is the epitome of Sardinian wine. Cannonau is originally imported from Spain, where it is known as Alicante or Garnacha. Cannonau di Sardegna wines have attracted considerable attention in the last few years for their association with longevity. Sardinian locals tend to live well into their 90s and in many cases to over 100, and diet on the island is usually given as a key factor in this. Cannonau de Sardegna wines tend to be high in anthocyanins and polyphenols, antioxidant-rich compounds which have been linked to heart health.
Winemaking:
Manual harvest 2nd and 3rd week in Sept. Grapes from different plots are processed separately. Destemming and soft pressing, static decantation. Fermentation is carried in stainless steel vats with only indigenous yeast and, as per Piero’s habit, skin maceration is done with hand pigeage and limited to a week in order to avoid big heavy wine’s extraction. The aging process combines steel vats and 4th passage barriques for 6 months. 6 more months of aging in the bottle before being released to the market.
Tasting Notes:
Deep ruby color tending to garnet; the nose is intense and complex reminding us the Mediterranean sea. Fresh balsamic notes, reminiscence of red fruits and spices. In the mouth it has a good length and power.
