The Grape
Chianti Classico DOCG is the heartland of the Chianti wine region – its traditional and longest-established viticultural area. Chianti Classico wines must contain a minimum of 80 percent of the Sangiovese variety. The remainder can be made from other native or international grapes. In this particular case Merlot. Some classic markers to this essential Tuscan red are notes of preserved sour cherries, dried oregano, balsamic reduction, tomato leaf, espresso, tea and sweet tobacco.
Winemaking:
Selected from the best grapes in Donna Laura’s vineyard, Bramosia undergoes a temperature-controlled fermentation with frequent remontage. 10% of the wine is aged in tonneaux for 9 months and the rest sees only stainless steel tanks. 15% Merlot is added to the blend before bottling.
Tasting Notes:
With a deep ruby color and intense aromas of cherry and red fruit, this Chianti Classico balances ripe fruit and acidity with well-integrated accents of wood and spice. Overall deeply intense, mouthfeel full & persistent. Aromas of strawberries and rose petals.
Recommended Pairings:
There are few pleasures as distinct as a tart, savory, herbaceous Chianti wine next to a plate of sliced prosciutto or pasta al Pomodoro. Amazing with Tuscan slow-simmered Ragù al Chingiale made with wild boar. Pizza is another favorite pairing and superb with roasted and grilled meats such as a dry-aged porterhouse with a side of roasted vegetables.
