Pitina is a peasant invention, designed to preserve meat in the autumn and winter in areas like the valleys north of Pordenone. Traditionally, it is made from game meat.
To make our’s, we mix finely minced pork shoulder with salt, garlic, and black pepper. We then coat the PITINA with cornmeal and lightly smoke it for 14-16 hours. Ready to eat!
