Produced in the alpine pastures of Valtellina during the summer, Bitto is made with whole cow’s milk and just a small quantity (no more than 10%) of goat’s milk.

This is a fantastic table cheese to eat raw.
Please know our Bitto wheels are aged for over 24 months, occasionally there may be some natural edible mold infiltration during the aging process; this is completely normal for this type of cheese.
Safe to eat and does not alter the wonderful, pungent flavor of Bitto.
