This raw milk cheese takes its name from a village in the upper Brembana Valley. This cheese is soft and compact, with unique patridge eye holes and a young, typically aromatic delicate flavor. Each wheel is aged for at least 30 days, and we recommend setting it at room temperature for 15 minutes before consuming it. 

For a classic pairing, melt the cheese over a warm batch of polenta and pair it with a full-bodied red wine.
