The origin of Valtellina Casera dates back to 1500s--this cheese is obtained from fresh mountain milk exclusively from the farms located in the province of Sondrio. Maturing takes place in traditional “casere” or ripening facilities.
Valtellina Casera is an excellent table cheese. It can be matched with Valtellina red wines, as well as with jams and honey. It is the essential ingredient in the traditional recipes of Valtellina, such as ‘Pizzoccheri,' a classic baked buckwheat pasta dish.
