Southwest of Padova in the Veneto, the Colli Euganei area has become one of the champions of Bordeaux varietals in Italy. Merlot, Cabernet Sauvignon and Cabernet Franc thrive and have a significant presence here together with local varieties such
as the ancient Venetian variety Raboso. The structure of this wines are reminiscent of the famed Right Bank Bordeaux where Merlot and Cabernet Franc are dominant. The addition of Raboso tipically contributes a tangy acidity but in this case Raboso goes through appasimento (a traditional grape drying process) which rounds out even further this already ultra smooth blend.
Mashing of the grapes for about 6 to 8 days.The fermentation is in steal tanks and lasts a week after which aging occurs for 12 months in 20 hl and 40 hl Slavonian oak barrels and barriques. Minimum cellaring for 3 months at the winery before release. Ca’ Emo is a baby version of their flagship ‘La Montecchia’ and It is ready to drink as it leaves the estate and to do this the blend includes more Merlot and some dried (appasimento) Raboso.
Plum, blackcurrant, strawberry jam and fig, lovely depth and fine mature tannins. Intense and pure, a delicious wine.
