Gennari Parmigiano--the Ferrari of Parmigiano. The milk for these cheeses is skimmed minimally, producing very little rennet, very little whey, a highly controlled brine, and optimal slow aging. The features make production more costly, but makes a difference on your taste buds!
We recommend eating it raw, or with a touch of Delizia Vinegar. It also makes a fantastic addition to any charcuterie board.
