Tasting Notes:
Color: Ruby red. Bouquet: an herbal scent with an edge of fresh fruity hints with a touch of cherries and raspberry tones. Flavor: fresh and tasty flavor consistent with the bouquet; light notes of a bitter fruity taste with a harmonious finish. No oak aging is required to show brilliant wild berry, tobacco, tart cherry, and black pepper and even some herbs as well. Serving suggestions: Best served between 16°C and 18°C (60-64° Fahrenheit). Food Pairings: Pasta or risotto with meat sauce, fish soup with tomato

Vinyard Notes:
Vineyard: The Noelia Ricci vineyard is located on the best 8 hectares of the estate, creating a vineyard inside of a vineyard, with a southwest exposure. The Noelia Ricci vineyard sits at around 250- 300 meters in elevation, a bit higher than the rest of the estate, which lies near Predappio in the eastern part of Romagna, not far from Rimini. Soil: calcareous limestone and sandy soil, rich in minerals and sulfur Training System: Ruayat; cane pruning for vigorous growing propensity Viticulture: average age of productive vines is 18 years old. Plant density: 4500 plants per hectare. 9 hectares or about 22 acres.

Winemaking Notes:
Vinification: A focus on natural wine making and minimal intervention showcases the Sangiovese in the best light possible. The grapes are fermented with indigenous yeasts in stainless steel, temperature controlled tanks. The maceration (with the skins) is 18 days for the Sangiovese, allowing the malolactic fermentation. Harvested: third week of September, by hand. Aging Capacity: This process allows for 6 months in the stainless steel tanks and a minimum of 8 months in bottle.
