Essentija is essentially a Bovale (sardo). Pala is the champion of this native varietal that at one time was about to be abandoned. After gentle pressing, maceration follows at controlled temperature with the addition of selected yeasts and lasts from 8-10 days. Next, the fermentation follows in stainless steel vats at a controlled temperature of 22-24°C. After a light clarification, refinement follows for about 4 months in underground cement baths. The wine is moved to 225-liter French oak barriques for approximately 3 months, and then back to stainless steel tanks for 3 months. It then rests in bottle for a few months before release.
