The Grape:
Mostly known as a blending companion to Cabernet Sauvignon and/or Merlot, Cabernet Franc is one of the most important grapes in the world. It is the parent grape of both Cabernet Sauvignon, Merlot and Carmenere. It reaches its pinnacle both in Bordeaux and Chinon in France but has also found great heights in regions like Friuli where the Friulians craft some of the world’s most elegant, detailed, varietally true versions outside of France. In addition to its notes of strawberry and plum, Cabernet Franc uniquely displays a classic bell pepper character product of its elevated contents of naturally occurring compounds called “pyrazines”.
Winemaking:
Harvest is manual, mainly in the early hours of the morning at the end of October.
Traditional vinification, starting with careful destemming; followed fermentation of the skins. Wine is drawn off after 4-7 days. Then light pressing of the skins. Wine left in contact with lees for a long period.
Tasting Notes:
A red wine with intense ruby red color with purple hues. Its characteristic herbaceous fragrance is elegant and spicy. Velvety, smooth, slightly bitter, young but full taste.
